Hello i am building a Electric Biab , and i am not sure where to place the Pt 100 sensor on my 8 gallon Mash kettle to get the best temperature reading . can any one help me ?

If it is RIMs or HERMs then you want to put it at the top of the tube. (the output of the heat exchanger)

if it is direct heat, I would put it midway. you will have to stir the mash anyway.
 
For e-BIAB, if you are going to recirculate during mash, inserting the probe into a tee at the kettle output should work best. If not recirculating, another option is to put it low, with the element, underneath whatever will hold your bag off the element. Other placements are likely to interfere with the bag.
