Proper way to transfer from 2ndary to Keg?

In the past I'd either add the priming sugar to the bottom of the keg or mix with water and add to the beer. OR I'd force carbonate with CO2.

I think that I've been adding the beer to the keg improperly.

What I would do is place a strainer with cheese cloth and then pour the beer into the keg then add the sugar to carbonate. I'm guessing this isn't correct.

Could anyone share a proper way to transfer from secondary to keg?

I use a racking cane and siphon the beer from secondary into the bottom of my keg. If I feel that I need to use a strainer I will wrap a muslin bag either around my racking cane or the end of my siphon hose.

I'm not sure what you mean when you say pour your beer into the keg? You want to be careful with oxidation and reduce any splashing or pouring.

Yea, i pour it through the strainer/cloth and it just drops....thereby inducing oxidation. :( I knew that was wrong. booooo......well that's in the past...that's why I want to do it correctly this time around.

I wouldn't wrap the strainer bag on the outlet end of your siphon hose. You will oxidize your beer that way I would think. Wrapping it around the siphon part though would be best.
 
I would just treat the keg like any other container you were transferring to. I would let the beer rest for at least a few weeks or cold crash it before racking in tho to limit any sediment.
 
You definitely want to minimize exposure to O2. Read a thread (actually it was someone's signature) the other day where a guy said he floods his keg with CO2; purges it; floods it again; then racks into the keg.

Definitely no pouring!
 
I ferment in carboys and use carboy caps. To transfer beer, either to the keg or a secondary, I purge the receiver vessel with CO2 and then I have carboy caps with racking canes in them connected by tubing. I've rigged up one cap so I can hook it to my CO2 tank. To start the flow I just turn the gas on a little and it pushes the beer out. This way my beer is constantly covered with a blanket of CO2.

I've done it this way many time without the positive pressure from the secondary.. Gravity works too but doing it this way is the best way to prevent oxidizing and you don't really need to purge your head space :)
