Hi everybody.
I have some serious issues about my kombucha.
I will try to explain what i have done already to find problem.
So i am brewing Kombucha with Green jasmine tea and with some teas which are aromatized.
Problem is that after some 4-5 days Kombucha gets really fizzy and doesnt grow more. Tea doesnt taste vinegary but more like sour.I guess problem is that Yeast take over vinegar bacteria and in end turns it into fizzy drink.
Generaly there is less fizz with black tea as much as i have tried .
Also kombucha taste better when i make it with vinegar instead of kombucha leftover.
In most cases i make concentrated tea solution and than dilute it with cold water
Is that ok or there could be some yeasts in tap water? Should i boil all water for kombucha brew so that it is heat treated?
I make tea 1 liter and than i add cold water to get 3 l .
Scoby grow better when i add 50 ml vinegar for 3 l of sweetened tea.
But even than i get problem with overactive yeast which after some 6-7 days starts to carbonate drink and scoby stop to grow .
I have tried differant scobies and problem seems the same.
Do you think these scobies have problems with green tea?
Also i cant make new kombucha from this fizzy kombucha because new batch turns fizzy in few days.
So i guess problem is in vinegar bacteria?
Please help me as i am also selling kombucha and this is serious problem right now.
