Hello, I have a custom made non alcoholic Fruit Beer recipe that I have done twice and I enjoy making it but it does not last very long and turns gassy real quick.

Makes 1 Gallon or can be diluted to make more

Bill:

2 pounds of grated Ginger
3 pounds of frozen Blueberries

Directions

Boil Ginger for 1 hour
Add Blueberries to Ginger wort and boil for another hour.
Cool and add yeast/sugar to carb


The only thing I can figure is that I am degrading the Blueberries too much during the boil... I use the Ginger as if it was a hop and how it cleans a wort...

What should I do? Add fruity Hops? Mash the blueberries without heat?

I'm not sure why the fruit would need that much boiling. My fruit additions are just at the end of boil or into the fermenter.

Not certain why a lengthy boil would be needed for something that completely violates the Reinheitsgebot. :)

Do you have any idea what the SG is of the juice pre-boil and post boil?

The first time I made this, I treated the fruit like I was mashing grain but now I'm changing my mind because it tastes gassy after awhile... I think I'll add some hops and add the fruit when I carb it.

I don't keep a gravity reading when I do this recipe because it is non alcoholic
 
Gravity readings might let you find some level of consistency though from batch to batch.

And if you aren't killing the yeast, then I'd think the longer it goes from day 1, the more alcohol free it is not.
