I am new to brewing, and my son gave me ingredients that did not come in a kit. How much water and sugar do I use for one gallon of beer?
 
1oz of dextrose or table sugar is a decent starting point and won't steer you too far wrong.

A longer answer is..

It depends on the temperature of the beer, style of beer, type of sugar etc.


1oz sugar disolved in a little water, bring it to a boil in microwave (happens fast) and put it into your bottling bucket, rack the beer onto it, bottle immediately.

Yep, this is what I've been doing with my one gallon batches, one recipe that I've used said to use 2 tablespoons of sugar for doing batch priming, which is the equivalent of 1 oz as Gavin listed. I've also used the bottle priming method (1/2 -3/4 teaspoon per 12oz bottle or the Fizz drops 1 per 12oz bottle) and that works fine too. There's also a forum topic devoted to just 1 Gallon brewing, in case you haven't seen it.
 
Those calculators explain why my beer is too carbonated. I brewed a brown ale and it's carbonated like soda. I was expecting something a little less fizzy. Instructions called for the entire 5 oz bag of corn sugar but the calculators say it should be about 3.5 oz. Its not ruined or anything but now I know.
