I made a two gallon batch of Prickly Pear mead back in November and racked to secondary at the end of December.
I ended up with one 4 liter jug plus 3 quarts. I decided to let the 4 liter age a bit more and experiment with the 3 quarts that were left over. The ABV of the mead is around 12%.
I froze concentrated the 3 quarts and ended up with 1 liter plus about a pint of concentrated mead.
I bottled the 1 liter and will taste test the pint as time goes on. On first taste, it is very strong but has a good flavor. Like mead, a bit dry and very boozy. I think it is about 20% ABV but not sure how to figure that out.
I love this hobby and all the possibilities. So much fun.
