Just found this website and would love some input on my 2nd partial mash recipe. I am trying to make a partial mash lager but I talked to my local home brewing store and they said I am looking at a 7-8% alcohol volume based on my ingredients. Here is what I have minus the hops:
3lbs Pale Extra Light (DME)
5lbs 2 Row
1lbs Crystal 20L
3lbs Honey
Wyeast 2007

If they are right, I am trying to find a way to lessen the alcohol content without starting over. If I boil my honey for 30 minutes in the wort, will this be better than adding it to the primary fermenter? How low can I go on the 2 row?

Finally, all they had for steeping grains was Crystal 20L, but I was hoping for 10L, what would happen if I didn't steep any grains?

With a partial mash, you shouldn't be steeping at all. All of your grains should be mixed in a mash tun and mashed for 60 minutes. The difference between 20L and 10L is minimal and shouldn't effect your recipe much. Since you've only got a pound of specialty grains, you could go as low as probably 2lbs of 2-row. I've never partial mashed though, so I'm not positive about that. I would think it's plenty to help convert your crystal.

I wouldn't suggest boiling your honey for 30 minutes. You'll lose practically all flavor from it. I'd add it to the last few minutes of the boil.

As for your recipe...are you trying to keep the same proportions and just lower the alcohol? You're at around 7.6% ABV right now. If you use 75% of each amount you have listed, it'll put you around 5.6%
