Long story short- Clarity Ferm!
I was getting ready to brew a Kolsch for the first time. As a BIAB brewer without any filtering or post-fermentation fining, my beers generally take an extra 2-3 weeks in the fridge post-carbonation to "clean" themselves up. I think it's the polyphenols and some proteins that crash out of solution over that time that lead to the cleaner taste and more clarity.
So I ordered Clarity Ferm as a what-the-hell addition. Clearest beer I've ever racked to the bottling bucket. And after 2 weeks of carbonating I threw one in the fridge for a day to chill down for a taste test. I've had some good beers, and won awards before, but I've never had a beer that was commercially clean after only 1 day in the fridge. I am amazed.
