Im a new boy to this game,so help me out fellas.I. have now done 2 brews using coopers lme and and I am very happy with the results.I was thinking of doing a porter lme and maybee adding a hop tea and some chocolate dme(if there is such a thing)I live in the uk,so please no exotic ingredients I can only get in the states.Thank you brewmasters.

I did my first ever porter this past weekend, and I used chocolate malt as a steeping grain, as well as a bit of black patent malt.

So, light dme, plus steeping grains, simple hop treatment and an ale yeast.

Won't know the result for a few weeks, but the aroma was amazing, and the process very simple

I don't think there's chocolate extracts out there, at least not readily available ones. Just use a bit of chocolate malt for steeping grains, and if you want more than just subtle chocolate flavor, research using things like cocoa powder later in fermentation; at least that's what I think I've heard before from professional brewers on podcasts.

You can also take squares of baker's chocolate, melt it in the microwave for a minute or so, and add it in at the beginning of the boil. I added this to an oatmeal stout, then later added coffee in the secondary. The baker's chocolate definitely added a nice flavor component.

I've used cocoa powder (in the boil) and cacao nibs (in secondary) in the past with great results.

Cheers my man,let us know how it go:-D

it's the one on the right... will let you know in about 4 weeks.

Ive done this as well, but i recomend you skim off the milkfat at the top of when it gets a good boil going. it will all pool in up conveniently. I assume if you leave it in could get rancid.

Interesting, I'll have to try that next time. I had seen this done first on Northern Brewer. So far I haven't noticed any off flavors on my stout. As a matter fact it's one of my most popular on tap.

Great minds think alike. LOL. I'm going to start a chocolate porter this weekend. I'm planning on using cocoa powder. I'll let you know how it turns out.

Chip's stout, right? I wanted to do the same thing and I probably will in my next one.

Got my coopets stout kit,but a bit worried by tales of monsterous foaming during ferm.I will be using 500g dme and 500g brown sugar.Any info or tips please fellas.

Chip's Stout was indeed where I got the idea from. I haven't tried racking a stout onto cocoa nibs before, buying was pleased with the results of Chip's methods

This. My stout fermentation wasn't anything crazy, but every one is different. You could start with a blowoff if you're worried about it, or at least have one handy that you can transition roof necessary

if you're worried about foaming out then setup a blow off tube.

Thanks fellas, ill make up a blow off and remove the airlock.Im using 1 can of coopers stout,500g dark dme,and thinking of adding 1kg of brown demarara sugar. What do reckon folks?
