I mixed up a new batch yesterday morning. Instead of using a scoby, I pour an ounce or so of my last batch into the new batch, as an inoculant. Sitting on my kitchen counter, I check it every few hours by loosening the cap and listening for escaping gas. This morning around 8AM, I checked it again, and there was a bit of gas, but nothing very significant. Then around noon, I opened it, and there was a minor eruption happening.
This is just a bit past when I judge it to be optimal, and put it in the fridge. I managed to bleed off most of the gas, and salvage the batch. After it cooled down in the fridge, it seems to be OK. It still tastes sweet, and doesn't foam up as much.
This seems to be an optimum strain, which is tuned to my recipe, and doesn't take very long to ferment. The original scoby took almost a week to ferment.
