I'm debating whether I need a fan to run cold air up into the coffin.

Who does use a fan and more importantly who doesn't and do you get excessive foaming?
 
I used copper in the three I have built with no foaming issues. I think the temp differences between what the controller was reading and beer in a styrofoam cup was less than two degrees.

If the keezer had a collar then I would want a fan also.
 
I used two 4" inline inductor fans, one as an intake to draw cold air out of the freezer chest up into the coffin and one as an exhaust to push warmer air out of the other end of the coffin back down into the freezer. I used a dual stage temp. controller, so the coffin temp. and keezer temp. work independently of each other. I am able to maintain a low differential without the fans running non-stop. No foaming issue whatsoever!
