I just found myself with only an inch of room in my kettle after adding the DME and saw the foam rising... but then I remembered the advice some of you gave about using a fan pointed at the top of the kettle here: https://www.homebrewtalk.com/f39/spent-25-min-taming-dme-hot-break-116034/

It worked great! Took some time still (maybe 10 min), but definitely more controlled than last time!

The fan is a good trick, but I moved on to fermcap-s. It is pretty cheap and just seems easier to me. Both are just as effective really.
 
+1 fermcap it costs a few cents a galon for the stuff, probably cheaper than the electricity to run the fan.
