Hi,

I don't want to end up with vinegar. How serious is the possibility of oxidation in a food grade plastic bucket with airlock?

I planned to let it sit for about two months. Is that ill advised? If so, how long is safe in the bucket?

Dang, should have just fermented primary in plastic and then racked to glass. Next time.

Thanks for any advice.
 
it's ok for it. that's 1 of the things that make it food-grade, yes, glass is safer, since if it cracks or anything, you know, but go for it
 
depends how full it is- in a carboy you can fill it right to the top, or at least into the skinny neck so very little air left and very little surface area in contact with air. not really the case with a bucket
 
Don't sweat it. I've left beer in plastic buckets for 6 months at a time on accident. I stuck a batch in the back of a closet and forgot about it. Turned out great anyway.
 
Nothing wrong with those. I like how buckets are easy to reach in and clean but that is personal preference. I also ferment in cornies so I dont mind a bit of a challenge.

If you do want one of these I noticed that morebeer.com has them on sale (today only) for 18.50.
