I bought five 1gallon jugs and have well over 5 gallons of treetop apple juice so I thought it would be interesting to compare some different yeasts.

What sort of yeast would you recommend comparing? Right now I'm thinking of trying something like this:

  • Muntons Ale Yeast
  • Lalvin 71B-1122
  • Lalvin ICV D-47
  • Red Star Cotes Des Blanc
  • Red Star Montrachet
  • White Labs WLP720
  • White Labs WLP775

As you can see I probably need to buy a few more jugs but that's not a big deal.


Besides checking the SG each day, and the results, what other sort of variables/conditions would you monitor?
 
Just the end taste and end FG corrected for temperature. Assuming they'll all ferment at identical conditions. If you were usingi a hefe yeast (WLP300) you might try it at 68F or so.
