Yesterday I brewed a pilsner inspired my Firestone Walker's Pivo Pils. Here's the recipe...

Batch Size: 5.5 Gallons

9.5 lbs Pilsner Malt
12.8 oz Vienna Malt
8 oz Aromatic Malt
6.4 oz Munich Malt

5.4 SRM

0.70 oz Magnum (12.2% AA) @ 60 minutes
0.75 oz Spalt Select (3.1% AA) @ 20 minutes
0.75 oz Saphir (3.6% AA) @ 20 minutes
0.55 oz Spalt Select (3.1% AA) @ 5 minutes
0.50 oz Saphir (3.6% AA) @ Flame out -> 15 minute whirlpool

41.4 IBUs

Step Mash: 122 (20), 145(20), 152 (40), 165 (10, mash out) -> Fly sparge w/ 170F water and collect 7.75 gallons

Preboil: 1.046 (target 1.044)

OG: 1.057 (target 1.056)

Yeast: Wyeast 2124 Bohemian Lager (2 packs) 2.5 liter starter w/ stir plate

Target ABV: 5.4%

Notes: The step mash didn't go as smoothly as I would have liked, but I recovered well and hit my numbers. If I brew this recipe again I'll probably make the second sacc. rest temp 155 to all for more residual malt sweetness / character. Also, while Pivo Pils uses 100% pilsner malt, I added some specialty malts because I didn't want to try out a decoction mash for the first time with my first pilsner.
