I will be putting a stout on top of a yeast cake from a pale ale.

Wondering how soon, or how much time I might have, between siphoning the pale ale into secondary and pouring the stout onto the yeast cake.

Would I have a couple of hours, perhaps overnight, that the yeast would be ok...or will it only work if done immediately?

Should be fine overnight . I would not go any longer than that, although I have heard of people waiting a few days later.

I always rack it on within a few hours and it usually takes off like crazy with very a vigorous fermit.

Good Luck an I am sure it will work out just fine if sanitation is kept in mind throughout the process
