Was sitting on the deck having a beer staring at the the three large pineapple sage plants at home and was pondering putting some of the leaves in a future brew...maybe the American Smash Session Ale I have to brew...

Anyway ever use pineapple sage, and at what point in the process would I add it? (extract brew kit)?

Thanks for any input...

Ive never used pineapple sage in particular, but in general with herbs, add it in the last minute or two of the boil. Id err on the side of caution with any herb and spice additions, start with 50 grams or less of cut or bruised fresh leaves.
 
careful with that pineapple sage. I have grown it and love the flowers and the smell, but I find little use for it in food or beverage. It had very little flavor at all, and what is there is more like green grass. Maybe if you dried some that would dissipate. You could also be onto something different, so take my advice with a grain of salt.
 
We grew pineapple sage a few times in the herb garden. Fresh, it tasted more like some kind of herbal lemon or other. Dried, it was a little better, but not like NZ hops or anything. In fact, NZ hops were better...
