Pineapple Cream Ale anybody?

Hi everyone,

I am new to brewing and new to HBT. First of all, let me say thanks to everyone on here for helping me out with your many experiences. I have made two beers so far and I am planning my third but I need a little help. I have tasted a few cream ales with different kinds of added flavors (orange, chai tea, vanilla, etc.) and I thought I would like to make one with pineapple. At first I thought I would buy a kit, but I brew all organic for a variety of reasons and it is difficult to find some varieties of malt extract that are also organic. By stitching together a few recipes, I have come up with something that I THINK should come out tasting like a cream ale. Maybe someone out there can steer me straight if I am off base:

Briess Organic Liquid Malt Extract, 6 Lb.
Organic Rice Syrup, 2 Lb.
American Liberty Organic Pellet Hops 1.0 oz (60 min.)
American Liberty Organic Pellet Hops .5 oz (5 min.)
White Labs Cream Ale Yeast Blend

My first question is will the above frankenstein recipe come out tasting like a cream ale, and my bigger question is how do I add the pineapple to it? I was thinking about cutting up a whole pineapple into chunks and dropping it into my secondary. Will this work? If so, is one pineapple enough and how long should leave it in secondary?

Any guidance on this beer would be much appreciated.

I've been researching pineapple additions for a Pineapple kolsch I'm brewing tomorrow. After all the recipes and comments it seems like a pound of fruit per gallon of beer is good. Make a puree and pour it in your secondary and rack on top of it.

I've never done it but this is what I plan on doing.

Thanks HeritageHD, 1 lb per gallon seems about right. Is the idea with the puree to increase the surface area of the fruit? It sounds logical.
 
I added my Pineapple last night. I never really thought about it but the fruit floats.

Fortunately I had a lot of head space because the pineapple really kicked up some krausen. I'm thinking 2 weeks on the fruit then to the bottle. Ill keep you updated on how it turns out.

Thanks for the update and the pic HeritageHD! I have not had chance to brew mine yet. I have been on the road for work. I have a red ale in my primary which I will bottle when I get home tomorrow. Probably will brew the cream ale on Sunday. I figure a week or so until the pineapple secondary. I will post a pic when I get to that point.
