Here is my experience: 4 average extract batches, 1 all grain blonde (biermunchers), 1 cider in the primary. That's it! I want to do a delicious 5 gallon all grain. No trendy BS like NE IPA or funky sour. Also, I want to stay at or below 6% ABV. Go!

Quick tweaks: replace the bittering addition of 6oz for an ounce or two of modern high alpha hops, dry hop with 2-3oz of hops of your liking, bring the Brown malt down to ~15% and the black to ~2%, bring the OG down to 1.060 by reducing the pale malt. I've done a few beers in this vein and they are really tasty. The basic porter with an OG of 1.055 and umpteen IBUs was delicious.

Or you can go all traditional and end up with half a pound of Goldings in your FV!
