So I started a Flanders back in September using the Wyeast Roeselare blend. A decent pellicle formed among the oak chips a few months ago, then dropped out when the chips sunk about 3 weeks ago. I was scheduled to bottle today but when I took off the box I was using to keep the light off of the beer I found a full pellicle completely coating the surface. Is this normal? Should I wait a bit?

Is the beer roapy? Pedio can cause a beer to get sick more than once. Not that the pellicle is neccessary an indication of that. Likely when the wood sunk the pellicle went with it. If it tastes fine you can bottle. Just rack from under the pellicle.

I don't think you should judge the timing of anything on the pellicle. They pellicle forms in response to oxygen in the headspace. That said you are only at around 6 months. I think it's early yet.

Just to follow up, I bottled this about a month ago and even though It was early I put it into my club's wood aged brew competition. It didn't win anything but a brewmaster from one of the more successful breweries in the area said it's well on it's way to being a very tasty Flanders. I guess my worries were unfounded.
