Hello HBT.

I've been absent from awhile, but I need your great minds to help me with something.

Quick back story, I've been homebrewing beer and mead for a couple years now. On a recent trip out to Texas to visit my parents, my enthusiasm for homebrewing sparked a big interest in my dad to start doing so too. My parents had decided to move back to Daytona (where they raised me and I've lived my whole life) and my dad thought it would be something fun to do and ensure I visit them often after they move back.

My parents visited B & S Brewers Guild in Houston, and joined in their class/demonstration they do every saturday to teach people how to brew beer, and occasionally wine.

They picked up 2 kits to bring back with them. One of which is a Stone Arrogant Bastard clone called Persnickety Bitch (I do so love the name).

This is where my question comes in.

Since my parents still have not brewed themselves yet, the plan is for this IPA that they're going to come over and brew with me. However, reading the instructions B & S put together have left me just a bit puzzled.

The kit comes with 1 oz of Chinook hops for bittering. 1/2 oz each of Northern Brewer hops and Perle hops for flavoring, and 1/2 oz of each of those again for finishing. (Due to hops shortages, some hops may be substituted). Instead of Chinook, I got 1 oz. of Nugget Domestic Pellet Variety, which I assume of course replaces the Chinook.

So far, no issue.

Then, when reading the instructions for this partial mash kit, it specifies that after cooling the wort and transferring to the primary, that I should add the fermenting hops. The ingredient list doesn't specify which, if any, of the hops are fermenting hops.

My question is, do you think that the instructions are just basic, catch all instructions for all their kits, and that this recipe simply doesn't use fermenting hops? Or, am I supposed to split the 1 oz Chinook replacement hops and use 1/2 for bittering and 1/2 for fermenting?

This will be my first time doing an IPA (I know, I should have been doing IPAs for almost as long as I've been homebrewing, but I just recently, in the past 3 months, started enjoying them).

Any help/input/advice would be greatly appreciated.

Ive never heard of fermenting hops. Id just use them either in the boil or dry hop with them after fermentation is complete. Im pretty sure ive read somewhere that fermenting hops will only screw up the flavor profile and get some weird off flavors in your finished beer, and i know for a fact that leaving hops in the fermenter for more than a week or so will bring out grassy flavors.
 
Thanks, that's kind of what I figured. I just wanted to come check. I've not heard of fermenting hops before, and the ingredient list didn't specify any. Just the instructions.

I appreciate the advice.
 
No problem! Yeah i have no idea what that kit wants from fermenting hops... Confusing! lol
 
Other than the confusing instructions, it looks like a well put together kit. They do them in house from their own extract and grains. Brewing it tomorrow, we'll see how it goes.
