Nice day to brew. Sunny, no clouds. Nothing going on except brewing a Chimay Red clone and drinking a Chimay Red. All went well for the most part. Finished with the boil and was testing my counterflow chiller since I had an issue with it last time I used it. Hose came loose again this time. Was having trouble getting it to stay, so gave up on that (and am probably going to look into getting an immersion chiller instead, but that's another story). Decided to just do the old fashioned cold bath for tonight just to get it in the fermenter. filled the tub with cold water, sat the kettle in the water, took a sample to check my gravity. Went into the kitchen and held the sample tube under some cold water to cool it then checked gravity. It came out at 1.070, just a little under what I was aiming for but close enough to make me happy.

Now for the fun part. I thought I could hear some water running in the back of the house, so I hurried back to find the bath faucet had been turned back on by my kid in an attempt to "help" put some more cold water in the tub. Only problem is the kettle actually floated a little. Just enough for it to have slid under the faucet and my 10 gal kettle was very full (although it was definitely cooled off :p ). Took another gravity reading to see how watered down it was, and it read 1.042..... not quite what i was aiming for. so my attempt at a Chimay Red clone is now going to be a little bit experimental I think. I'm debating about just reboiling for a little bit to boil off some of the water and see what effect it has on it. Gives me an excuse to order some more ingredients at least and brew again in the next week or two. What would you do in this situation?
 
I feel ya, buddy. I was just into the late DME addition with 10 minutes to go, and my wife and kid come in playing school, and I am the "Bad Principle." Turned for 2 seconds to play the part and BAM, boil over! hahaaha That fast, man!
 
Thank him/her for helping while explaining in a most stern scientific voice that you must also use a hydrometer before adding any water.

My son brews gatorade concentrate in water bottles while I brew, while his efficiency is low, he has really rapid fermentation times.
 
If it makes you feel any better, I had a seamless brew session myself on saturday, culminating with me stupidly pitching the yeast while the wort was probably still around 95 degrees.

lol Love it.

I boiled an extra 30 minutes and ended up right at 1.060 for my og. I'm curious what the extra boil time is going to end up doing to the flavor. I guess I'll find out in a couple of months.
 
Any hop flavor or aroma will have dissipated, but unless you had a lot of late hop additions it probably wont make a big difference.
