Hey guys,
My family makes a really great jalapeno pepper jelly and I was thinking of trying to make a pale ale with it. Main questions are: will the pectin jell back up once cooled? And how will the apple cider vinegar affect the taste? Has anyone ever tried this or heard about it? I am fermenting a jalapeño pale ale right now, but was just thinking about doing this as well. What are y'all's thoughts?
 
Might be hazy unless you add pectic enzyme.... Also, the sugars in be jelly will ferment out. Factor that into your ABV and yeast attenuation.
 
Ooh... Just re-read and saw apple cider vinegar. Unless it's been cooked in the jelly-making process, the acetobacter in the vinegar will go after the ethanol in your beer and make a nice pepper jelly malt vinegar!
