im brewing a hard cider and i forgot to add pectic enzyme. can i add that into the secondary and if so should i dissolve it or boil it in some apple juice and rack on top of it, or forget about it?
 
Really you can just add it whenever, as long as it's not right before you bottle. Just add the powder to your carboy.
 
It will still work in secondary, but much less efficiently due to the alcohol. If I have to add more pectic enzyme, I usually add a double dose to compensate. It won't hurt it, or cause off flavors, but you make get more sediment.
