Papazian talks about making a low-alcohol beer that doesn't taste like water. He does a finished 1-gal high-gravity wort, which he then dilutes after fermentation with 3 gals de-aerated (boiled), cooled water, to make 4 gals of beer. Has anyone tried this, or can speak to the results of making a low-alcohol beer this way? As opposed to using a lighter grain bill and a standard 5-gal batch, for example?
 
I've had quite a few NA brews in my day and for the most part, the majority
of them don't taste all that great. Although some taste all right.

As for Papazans brew, I really can't see this turning out as anything
more than a watered down brew.

Lets face it. Beer needs alcohol to taste great.
