Papazian talks about making a low-alcohol beer that doesn't taste like water. He does a finished 1-gal high-gravity wort, which he then dilutes after fermentation with 3 gals de-aerated (boiled), cooled water, to make 4 gals of beer. Has anyone tried this, or can speak to the results of making a low-alcohol beer this way? As opposed to using a lighter grain bill and a standard 5-gal batch, for example?
