I cant find a good source for a reasonably priced one of these anywhere. Is buying a cheap PID and having it not control anything really the best option?

This might not be your cheapest solution, but, in my opinion it is your best solution.

One benefit of using a pid as a temp monitor is if your main pid goes out while you are in the middle of a brew, you can swap out the bad piece real quick and continue on with your brew.

This is what I use and it works perfect. Super quick readings and very accurate. There are a few others that use it as well without any problems I can speak of.

^^ I'm using the same one. It works great. I didn't realize how large it was. It's the sane height as the auber pid but double the length. No problems with it. It also reads in tenth of a degree increments as opposed to the pid which only reads in whole degrees.

I don't suppose this is easy to do a teardown and take some snapshots of the guts? Curious what they're using, but not quite curious enough to buy one.

What do you need to see? Display? Back of unit?

I don't know what's in them but it's much larger than the standard auber pid. It's in a very large case but looking into the holes in the back it doesn't look like there is very much inside. The only way to remove the back cover is to pull the front dispay cover off.
I'm not going to attempt that. The only part I can see inside is a pretty large 120Volt to 12volt transformer.

Looking for the PCB/chips/mcu inside -- curious what they're using to read the RTD probe. No worries -- no need to break it
