I m trying for a NE pale ale;
1 lbs 1.64 oz Wheat, Torrified (1.7 SRM) Grain 1
5.29 oz Cara-Pils/Dextrine (2.0 SRM) Grain 2
5.29 oz Caraaroma (130.0 SRM) Grain 3
8 lbs 13.10 oz Vienna Malt (3.5 SRM) Grain 4
0.53 oz Chinook [13.0%] - Boil 10 min Hops 5
1.41 oz Hallertua Blanc [9.3%] - Steep 15 min Hops 6
1.41 oz Styrian Wolf [13.6%] - Steep 15 min Hops 7
1 pkgs Funktown Pale (Yeast Bay #) Yeast 8
0.71 oz Hallertua Blanc [9.3%] - Dry Hop 7 days Hops 9
0.71 oz Styrian Wolf [13.6%] - Dry Hop 7 days Hops 10
0.53 oz Chinook [13.0%] - Dry Hop 7 days
Any thoughts?
Has any one any advice,never used this yeast before.
Styrian Wolf;Tropical fruits, blueberries, melon, raspberries, elderflower, violet.
Hallertau Blanc;tropical fruits, stone fruits and grapefruit.
 
Interesting, I haven't heard of Styrian Wolf hops before. I hope it turns out well. I haven't used Vienna in a NEIPA before, I usually just use 2 row or pilsner with favorable results. Also, Funktown ale is new to me, but I don't believe wild yeast to be a characteristic I associate with the NEIPA.

If I were you, I'd replace the Hallertau hops with a basic bittering charge and use the styrian wolf for all late addition. I would consider replacing a portion of the vienna with 2 row. I would also begin with conan or a clean ale strain so you have a baseline result to start experimenting with.

In the past I've tried too many new, uncharacteristic things when brewing and wound up with a product that was all over the place, not true to any style, not very good, and I could never detect why because I was all over the place with my recipe.

Yeah I just ordered them off Geterbrewed,i'm excited to use them,hopefully they wont clash with the yeast:)
