I had posted awhile back about a beer that I probably oxidized. I have no clue if it's oxidized because I have never tried an oxidized beer. It the off the topper double ipa extract kit from NB. I just popped my first bottle. It has almost a tart fruit taste to it. So my question Is what does an oxidized beer taste like?

Tartness can be caused by infection. If your beer actually rises to the level of being sour, this is your most likely culprit.

Fruity flavors are often caused by esters in the beer, which are produced during fermentation. If fermentation gets too warm or if you don't pitch enough live yeast you are likely to get noticeable ester production. This can be desirable in some styles but unpleasant in others.

Diagnosing the flavor is useful, but the more important question is, do you mind the flavor? If it tastes good, just tell everyone it's what you were going for!

Oxidized beer tastes like wet cardboard. You'll know it when you taste it. Is it a fruit taste from the hops, or a bad fruit taste? I've been asked if I add fruit to some of my beers. Nope, just comes from the hops.

Which yeast did you get with that kit? Tartness in a Heady clone is not necessarily a bad thing and can be a product of the yeast. I get a distinct orange juice quality from the yeast.
