While making a Spotted Cow clone kit from my LHBS I boiled off more than expected and only had 2 gallons of top off water and ended up closer to 4.5 gal batch, with a SG of 1.058. Beersmith now estimates my alc % will end up about 6%, pretty high for a cream ale. When i mix my sugar solution on bottling day, would it hurt any to dissolve the sugar into a half gallon of water and siphon my wort into that? I would gently stir it to mix thoroughly and hopefully lower my alcohol into a better range. Thoughts?
 
I usually top off when I transfer to my primary from my brew kettle to ensure I am at 5gal but doing it at the bottle time seems just as good as long as water is boiled to avoid contamination during bottling.
