I'm sure this topic has come up a few times but I will ask again. Brewed a caribou slobber northern brewer extract kit and bottled. Waited 2 weeks and tried one, poured almost all foam, but didn't gush when opened. Beer was fridge temp. Before bottling checked gravity 2 times about 2 days apart and had same reading. I used 4.7 oz of corn sugar for 5 gallons. Beer tastes ok just has a fizzy champagne like mouth feel to it. Is this over carbonated? Was my first brew and a little disappointing.
 
The carbonation may not be stable in the beer after just two weeks. As with most aspects of brewing, you might just give it more time to condition. After another week or two, put one in the fridge overnight, then give it a try.
 
Alright. Thank you. I've actually had two of them, about 3 days apart with same result, but like you said may just need more time.

3-4 weeks of long, hard waiting always. It's a struggle but makes it better if you're at all masochistic.

I've had a couple of batches come out over-carbonated. Both times, I followed the kit directions to the letter with priming sugar. My other beers I used a priming sugar calculator on have all come out perfectly carbed.
 
I used brewers friend.com priming sugar calculator. Came up with 4.7oz.

I had the same issue with my Caribou Slobber, but same as you, only waited 2 weeks in bottles.
Theres 2 more in my fridge I'm letting sit for a few days there, but the rest are still in the closet conditioning at ~65F for another week or two.
 
Opened one up last night at room temp, beer came flying out all over the counter. Could I possibly have an infection?

Opening one at room temp will always gush. Put one in he fridge for several days and ty again. The brew needs the cold to get the carbonation to absorb into the beer.
 
Sounds like you used way too much priming sugar. I usually use around 3.61 oz for 5 gal for ales
 
So I opened two that had been in my fridge for a few days today. Tomorrow is the 3 week mark so will put a few more in tomorrow. But of the 2 I opened today, both have been in fridge for the same amount of time, 4-5 days. One gushed and I lost half the beer down the sink, was overcarbonated like the other 3 I had opened. The second however, was great, did not foam at all when opened, and a hard pour into a glass gave it a great head, taste was much better than the other 3 as well.

Maybe I didn't mix the sugar as well as I thought...


Sounds like you used way too much priming sugar. I usually use around 3.61 oz for 5 gal for ales

The kit comes with 5oz and makes no mention of using only a portion of it.
 
I opened one last night. Has been in the fridge for 4 days, didn't gush but poured slowly into glass and was 3/4 foam. Still has a champagne like mouth feel.
