hey all, new member here. Just got a homebrew kit for christmas and did my bottling 2 weekends ago, about 9 days ago. Last weekend, I decided to open a bottle that I knew was going to have more than desired sediment in it, and when I did, the beer just over flowed out the top... I didn't think much other than I knew it was way to early to open, and I thought that it would settle down along the way. Here i am day 9 in the bottles, and the girlfriend calls me at work and says a bottle exploded and beer and glass is everywhere and a big mess of course. I'm doing research to figure out where I screwed up, but I used an ingredient kit, so everything was pre measured, and I used corn sugar to prime before bottling that came with the kit. I boil sugar and water and then cooled before adding to beer. I followed all direction except for one... which I forgot because I was eager to get the beer in the bottles... I added the cooled priming mixure to the bottling bucket, and then syphoned the beer over keeping the end of the hose at very bottom of bucket to help prevent oxygen from being introduce. then I was supposed to gently stir, to mix priming solution with beer, but I forgot and started bottling.. This is the only thing that I didn't do according to the directions... do you think this is the culprit? Or do you think I have an infection... Fermented for 2 weeks before racking to bottling bucket.. following all directions to a T and ensured cleanliness as well... any info is appreciated. thanks.
