Hi everyone,
While brewing a 4.5 litre batch of Viking Blood Clone, I tasted the brew halfway through the process to check where it was - and it was delicious at an SG of 1.038. So, I decided to make a quick 2 litre version, but without adding anything other than the hibiscus tea. I also used D47 instead of EC-1118, with more honey this time, so that it would finish fermenting with residual sugars. However, I may have used too much honey.
In the 2 litre carboy:
- 500ml strong hibiscus tea
- 1.1kg Hilltop Honey Clear Honey (it was only supposed to be 0.92kg but I over squeezed!)
- 5g packet D74 (I used half the packet, rehydrated in 50ml water at 35deg C, as per instructions, but when nothing happened for 2 days, I dry pitched the rest of the packet)
- Topped up with water
- OG was off the scale, but I estimate 1.15, maybe even 1.16.
I used half a teaspoon of yeast wine nutrient on the second day to help it start fermenting, with no signs of fermentation by the end of that day. Having read some threads on here, I think I may have put the yeast into osmotic shock. This morning, which is day 4 since pitching, there was still zero activity.
So, should I transfer into a gallon sized carboy and top up with, say, another half litre of boiled and cooled water to see if that starts fermentation? Are the yeasties dead in osmotic shock or just dormant? I'll buy another packet of D47 just incase!
