I'm moving to Yuma, AZ in a few days. From what I remember, there some massive citrus groves on the outside of the Marine base.
I was thinking about trying a lambic, and finding a way to leave my wort near the citrus groves overnight.
I've never brewed a lambic before and past experience with Belgians has been awful.
Has anyone ever tried a yeast starter with honey? I think of I used some orange honey, I could mix it to a tolerable gravity for the yeast (maybe a Wyeast 3278) and pitch it into my wort after about 24 hours. Without boiling the honey down too much, I'll preserve some additional bacteria and microorganisms to give the beer an extra push.
Would that be too much funk by chance?
With an addition to some other orange or citrus additives, I'd have a basis for an interesting beer. Any ideas?
