The proper technique in ALL cases is to as follows, and in this exact order...: FIRST.........do not SMELL your fermenting beer. EVER, this means you. SECONDLY......do not OPEN your fermenter unless you need to take a hydrometer reading.....which I honestly never do. As soon as you finish NOT opening your fermenter, immediately proceed to NOT smell it either. Repeat.
