So after a wee break from brewing as moved apartments.... I decided to brew a partial mash Scottish Ale 26 liters planned grain bill as below but brew night (Wed evening) was a nightmare.. drill failed so had to mill grains by hand then both my home made controllers failed so had to heath Robinson a swamp cooler... could this night get worse you ask? Well yes went to brew my Paulaner clone today and realized instead of using the amber extract can I used the wheat on the Scottish Ale!!! So what does everyone think I'll end up with???!

Its partial mash and you have lots of specialty malts going on. My bet is you still get a tasty Scottish ale, the wheat might add its own touch. Not sure about brewing a paulaner clone without wheat though - good luck with that!
 
Oh I should have said I ended up doing all grain wheat today... just adjusted the batch size to remove the extract...
 
Plan to lager it for a bit ... do you think it clear ..by my calculations if the extract is 65% wheat it would be 15% wheat in the grain bill? Plan to serve it via my beer engine so expecting a very full bodied Ale with a head that will never die!!

What is the percent of wheat in your extract? When I looked up one wheat extract it claimed to be 65% pale malt, 35% wheat. 65% wheat would be difficult to work with at the malting house.
 
C'mon I could even read wheat versus amber!! So googled and found 65% wheat it's a coopers 1.5kg Un hopped extract... if your correct and it's 35% wheat then I'm looking at 8 %?

It wasn't Coopers that I had looked up and Coopers could very well have used 65% wheat. Once you do an all grain batch with wheat you will see why I'm just a little skeptical. It tends to make sticky mass in the mash tun and become very hard to drain the wort out because wheat has no hulls like barley does and those hulls form the filter. Many home brewers add rice hulls to the mash to help filter when they brew with wheat.
