So the first week of my mead having yeast has past and it is already at 1.000 Brix and o% potential I took it off the fruit but bubbles have stopped through the air lock. Is it done? I used the whole package of lavlin d-47 in a one gallon batch and that is why (I assume) it fermented so quickly. it has a little booze taste but smells nice and doesn't taste like ethanol so am I ok?
 
I forgot the starting bros I will have it in about 9 hours but starting potential was 15%
 
Depending on temperature and volume of mead, one week is fairly typical. I would always use 1 pack per gallon. A) you cannot overpitch yeast using one pack (a pound of yeast or a kilo.. that is another story) and B) you CAN easily underpitch and under-pitching creates all kinds of issues... so there is no downside to using a whole pack but there are many negatives to using only part of a pack- including, of course, inviting all kinds of bacteria to feast on the yeast in your fridge..
