I only brew one-gallon batches right now (though debating on upgrading to 5, but unsure it's for me at this point) and I'm looking for some sites online (maybe this one?) that have a good supply of one-gallon recipes. I know you can convert 5-gallons, but it's easier for me to follow a 1-to-1 recipe. I haven't been doing this very long and still very much consider myself a beginner.

BrewGr is a great source. Not only does it supply you with recipes, it'll allow you to scale any recipe to any size brew session and help you calculate your strike & sparge temperature and volumes. Its also very easy to modify any recipe any way you see fit and build your own recipe and see how it fits on the BJCP style chart.
BrewGr is also a great place to catalog your favorite recipes.

Oh yeah....and its free.

If you can access a library, Emma Christensen has an excellent book which has all recipes in 1 gallon and 5 gallon versions. I made about 5 out of the book so far. Its also a good read.
