I have a bunch of hops that i purchased 1-2 years ago. Some are still vaccum sealed, but a lot are opened with the air squeezed out and a clothes pin holding them shut. Last month was the first time i got to brew for about 8 months because of a move and new baby. Long story short, my last 3-4 pale ales/IPAs have been quite lacking in bitterness, aroma, and hoppiness. I am now on a different water source, but firmly belive the hops are just old. I havent opened any of the vaccuum sealed hops because i was trying to get through the ones that are already opened. Unless someone tells me otherwise, im going to throw out the already opened hops. Do you think the vaccuum sealed ones are alright to keep? i think a part of me is going to die if i have to throw out 8-10lbs of hops....
