Do I need to do anything other than wake up my dry yeast? Do I need 2 packets or will 1 suffice?

I have to go to the lhbs tomorrow to pick up more star san so I will pick up another packet just in case. Thanks for the quick reply
 
If it is US-05 you should be fine with one pack. I use it all the time for my pale ales and that yeast always does its job.
 
I've used one pack of notty on a similar gravity brew. It will be fine (dry).
 
Still grab an extra packet. I like to keep a backup packet around just in case.

how many gallons??? That's kind of a big variable.

Assuming it is five... five gallons of 1070?

ok... what kind of beer??? What kind of yeast?? (two more big variables)

If you're doing a big wheat (I doubt it... not that big) you might want to underpitch. The strain on the yeast tends to give some folks the "offlfavors" they actually WANT in a wheat.

If you're doing a straight pale or an IPA and are using a clean US-05 or something, yeah, maybe one packet of dry would work but it is probably a much better idea to do two. Why underpitch (which will lead to all sorts of off flavors you don't want) when you don't have to?

I've used 1 pack in 5 gallons of 1.085 wort and it was an ample amount; started quickly enough and fermented pretty normally for notty.

IIRC, Mr Malty told me to use 10-11g.

this is what i do. if anything ever doesn't take off i can always through a pack of yeast in and still get beer, even if it's not the yeast i intended for the beer. i also keep some champagne yeast around too, incase i'm doing a cider/mead/something weird, and it doesn't take off.
