I think after you drink enough lambic your internal gut flora adapts. I can consume copious amounts of lambic and still feel 100% the next day.

Yup, Total Wine Milf. Cleared the Pinot, but left a few Groseille. And to think, I only walked in there to buy a $3 bottle of wine for my wife's grandma.....
