Didn't think I would ever make one of these threads but I searched and cannot seem to find a solution to this issue. So, I made my first batch on my new e herms system and everything went decent until I cooled and carbed my beer in my keezer. It is an ipa with citra, mosaic, and amarillo. Everything tasted great during fermentation and packaging. But once it carbed and cooled it tastes very watered down and boozy. Like carbonated water and vodka. This flavor wasn't noticeable at all when racking to the keg. My only critique was it was a little bitter which would condition out.
What gets me though is that when I take a small sample from my keezer and just get the warmer uncarbonated beer that was sitting in the beer line it tastes pretty good like when I sampled out of the fermenter. But my next pull that comes from the keg is straight boozy and thin with zero hop flavor. Could this be a co2 issue? It is getting low on co2 in the order gas area, but I haven't had this happen on any other beers.
Fermented with notty at 62 and raised to 65 after vigorous fermentation stopped for 2.5 weeks
