Seriously though, I've been swamped. If there is a separate thread on your endeavors please share.
 
No thread... Just whatever is on the brewery's website, which, as the Thread Narc so aptly pointed out... It's pretty limited info.

The short version is that we hope to be open and officially brewing in two to three weeks. We are down to the last few little things and then the building inspector has to come through. After that, we're ready to go. We have three initial beers we want to focus on:

1) a "Big Blonde"- just what it says. It's a 7.4% blonde. I played with the hop bill a bit and we ended up with what we think is a really nice, clean, easy-to-drink "big beer".
2) a Black Steam- also... Just what it says. Added some roast to a dampfbief and were really surprised at how dramatic the entire beer changes. The best way I can describe it is that it's a really light porter almost.
3) "Stinger IPA".. A dried out IPA around 8% that uses a bit of honey to help it get there. We dropped a lot of the malt out of the flavor profile intentionally. This allows the beer to come in at about 70 IBUs yet still really showcase the hops... Without being a bit of a cliche hop bomb.

With all three... Our thinking is that a large number of start-up nanos are trying to make the next super amazing Triple Decocted Latte Espresso Imperial Porter Aged in A Sherry Cask at Lagering Temps With Mulberries and Oysters.... Which is awesome... And I am ALL for that stuff... But about 90% of the market drinks Bud Light. For our first few beers, we want some "pay the bills" beers that will help us keep the lights on before we break into too much exotic stuff.
 
Trying to find decent flights to New Orleans for the Super Bowl... I'm NOT missing the Pats win this one.

I might have to fly into Mobile, Alabama though. New Orleans looks insane for prices right now and Mobile is only a 2 hour drive.

By the way, where are any of the NY fans? Not man enough to make their own beer I suppose. Sipping Chardonnay and all. Wait, did I just call out 49er fan as well?

Lolz2DaMax!!!! The Pats got handled by the Giants defense, imagine what the best defense in the league would have done to them if Bradshaws fumble recovered by Bowman had not been overturned. 49ers would have pulled out the Patriots ******** and beat them senseless with their own colons.
 
PA, how many running backs did the 49ers defense not only knock the **** out, but put them out of commission completely for at least one game? It was at least 6, with Pierre Thomas' ground crawl dragging his head being the funniest.

They get the Pats in NE this year. Should be a good one. Even Alex "Sucks Balls" Smiff should be able to get to that atrocious Pats' pass defense. Stopping Brady will be tougher, but the defense can hold it's own.

I predit Pats win 63-3

... and the 3 is only from a last minute hail mary against the Pats 4th string that falls short and then they get a 5 yard chip shot.

Had a bad decade, but still got 5 rings and had the greatest QB and greatest WR of all time play for them. Looking forward to the season, hope to see Willis and company continue to keep the opposing team's medical staffs busy.

Of course they don't *need* Moss. Don't really need ANY wide receivers when Alex Smith is the guy under center. Jerry Rice in his prime would be lucky to catch thirty balls from Smith.

Alex Smith sucks, this is a known fact. However he only needs to put up say 17 points per game.
