I’ve been working on a recipe to make a NZ style IPA. The inspiration was Hopwired IPA from 8 wired brewery. This is for my brother in law’s wedding so I want to make sure it’s gonna be good. I narrowed down a recipe that looks good on paper with the ingredients that are available to me. Of course there are no official clone recipes so it’s all speculation as to what they use over there.
What I’ve been struggling with is what yeast I should use. If I recall (and this part is a bit hazy since it’s been years since I got to try hopwired), this beer had a pretty complex and big malt expression at least for an IPA. So I’ve been looking at potential candidates that are suitable for IPAs but are more interesting than the standard Wyeast 1056. I was looking at Wyeast 1272 American ale II, Wyeast 1187 Ringwood ale and Wyeast 1332 Northwest ale.
I was wondering if any of these would fit the bill to produce a rich malt character while being clean enough to let those delicious NZ hops shine through. Any advice is appreciated.
