Hello,

I recently brewed a Blackforest Stout.
After 2 weeks fermenting, I bottled the beer.
Beer has been conditioning for a week. So I figured I would test one.
The carbonation level is perfect already! I'm wondering what to do now? I don't want them to "over carbonate" so should I put them all in the fridge and let them condition in there? Just wondering what the experts have to say! Thanks!! This beer is goooood!
 
There is a multi-part answer to a multi-part question:
A. What is the recipe?
B. What is the SG and FG?
C. What is the FG at time of bottling?
D. What did you use to prime for bottling (ratio)?

The simple answer... Bottles that are properly carbonated will not over-carbonate (unless something has gone wrong). They will carbonate and then start to age. The fermentables available decides how much carbonation there is and given that everything is done correctly, bottles will carbonate and then stop. Assuming you hit your target FG before bottling, you don't need to do anything... The will stay just as good, if not get better. If you like the exact beer you have now, "cold crash" them by placing them in the fridge now and stopping all processes occurring.

Honestly, this early, if you like the beer you have now wait a month or two after today and you'll be in heaven... Self control... Don't touch them...
 
Recipe:
0.45Kg Barley, Flaked
0.34Kg Chocolate Malt
0.23Kg Crystal Malt 60L
0.23Kg Roasted Barley
4.30Kg Pale Liquid Extract

3oz Fuggles Hops
0.25 Irish Moss
1pkg Irish Ale Yeast

1 Cup Cherry Liqueur (64g Sugar/cup)
1 Cup Creme de Cacao (64g Sugar/cup)

OG: 1.064 FG Target 1.017

Reached 1.022....and held at 1.022 for 8 days.

Bottled.

So I suppose the final gravity being low may be a concern. Recipe called for 3.93oz Corn Sugar for bottling. 128 grams of sugar being roughly 4.5oz. So slightly more sugar than called for. But was also unsure on "fermentable" sugars in a liqueur....my intentions are to leave it conditioning at room temp for another 3 weeks. Testing weekly. And go from there. Monitoring carb levels weekly as well of course.
