Nottingham going crazy

I just put loaded up my second brew into my new carboy, rehydrated 1 pack of nottingham, pitched it around 76 degrees and shook the hell out of the mix-that was saturday night, the next morning fermentation had begun, by that afternoon I had a good layer of krausen. This morning I have airlock action every half a second and the wort is churning like I cant believe! I had no idea those little fungi could exert so much energy.

Way more fun to watch fermentation in a carboy!
 
I would cool that down from 76 if you can. You might get some off flavors with notty at that high of a temp.
 
What is the beer temp at right now?

Sounds good compared to my notty pitched at 75 no activity for 3 days...

Starting up now but very slow activity.
 
I always pitch Nottingham. I actually hydrate it in a coffee mug full of wort for about 20 minutes. Normally after I pitch it I have activity in the airlock within 5 hours. For some reason my current batch took almost 60 hours... I don't know. I do know this. Something wants to live in your beer and there is a race going on. The faster you get the yeast going the more likely they will be the winner. I've never had off flavors from the rapid ferment, but maybe I've just always been lucky. Machinehead, sounds like we both got some defunct Nottingham this go round. I'm going through the same thing.

Yeah, I think so too.

Just from the airlock, once activity started it was going at 10 seconds between bubbles, now a day later its at 5 seconds.
 
its down to about 72 degrees now, airlock is still going strong, krausen is starting to subside, and I'm trying to get it to about 70 degrees if I can

I wouldn't mess about with it any more than you have to. Low 70's will be fine.
