I have some leftovers i'd like to put to use seeing as i wont be brewing again for a while and i dont want them to go to waste.
I have:
2lbs Golden Light DME
3lbs Light DME
.5lb pale chocolate malt
2oz warrior
1oz magnum
1oz east kent goldings
1 pkg US-05
too many hops, i know, but im not sure which one to use.
I dont think this would come out as an awesome brew but like i said, i'd rather not waste them.
Any ideas or suggestions would be great. Thanks guys
 
Something like this? Cheers!!!

Style: English Dark Mild
Type: Extract w/grain Size: 5 gallons
Color: 44 HCU (~20 SRM) Bitterness: 14 IBU
OG:1.038 FG:1.010 Alcohol:3.6% v/v (2.9% w/w)
Boil: 60 minutes SG 1.029 6.5 gallons

Malt:
3 lb. Light malt extract
2 lb. Amber malt extract

Grain: .
8 oz.chocolate

Hops:
.5 oz. Kent Goldings (5% AA, 60 min.)
.5 oz. Kent Goldings (5% AA, 5 min.)

Throw the other hops in the freezer. They should last until next fall, or when ever you brew again.
 
You could lower the batch volume and call it a Black-IPA. I think you could use all the hops if you proportioned them for lower utilization and stacked them in a way you think you might like.

I'd personally do something along the lines of this:

3gal Full Boil
Steep in the Chocolate

60 minutes - 3lbs Light DME + 2lbs Golden DME
30 minutes - .5oz Warrior
20 minutes - .5oz Magnum + .5oz EKG
10 minutes - .5oz EKG
5 minutes - .5oz Magnum + .5oz Warrior

Dry Hop with the remaining 1oz Warrior

I think it would actually be pretty good and should be a solid 7%ish Black-IPA.
You might consider using less hops in the boil for longer and dry hopping with the remaining hops. It is hard to go wrong mixing dry hops.

Why would you boil the water and DME for 30 minutes before your first hop addition? Surely the normal 60 minute boil is usually accompanied by hop additions at 60 minutes? Does boiling the DME on its own for 30 minutes achieve anything?

Nope, no need. I did a 15min boil IPA with DME, it was fantastic.
 
thanks guys. i think i'll go with the Black IPA. i also have some coriander, orange peel, coarse black pepper and candi sugar. you think any of those would be okay to add or am i pushing it?

They would be interesting additions you just couldn't call it a black IPA. (but really you can call it what you want, it's your beer. It just wouldn't conform to the recognised standard)

Good question because it forces me to question my processes.

I start all boils at 60 minutes regardless of when the first hops go in. It's how I learned to do this thing. As was pointed out it would get you more color but with this chocolate to volume ratio the DME isn't really going to contribute much additional color from extra boil time.

I'd say the additional time is more or less unnecessary. I will reconsider my approach in future boils.
 
If and when I do extract I always have some in at the start to utilize the hop isomerisation.. But I like late extract additions when making a lighter style. If it's not a lighter style, it all goes in at the beginning..
