I've gotten through my first 2 batch's of AG brewing now with out much trouble. Made a Scotch Ale and an IPA. I set up a two tiered system using converted Sanke kegs and a 10 gal Gott Cooler for mashing. I'm also using a 15 gal MiniBrew conical fermenter to increase my batch capability and relieve me from having to rack to a secondary. Now I want to go on and brew up an English Amber or Brown. Both my first beers taste pretty good and all seems well except a for a good foamy head when poured into a glass. There's a little head, but not what I'd expected. Is there some special trick to ensuring a good foamy head in the AG process? Any ideas would be greatly appreciated.
 
Add a little wheat to your brew, or some of the other specialty malts that boost head retention, also make sure that you are carbonating sufficiently, so that you actually have enough C02 to make bubbles.
