So I got a couple of questions here. I made this beer a little while ago. Just cracked open a couple after bottle conditioning for 3 weeks, and it's too orange....y. It's the witbier extract kit from Northern Brewer, but I did it with a full boil since I got a big enough pot. I really don't remember my reasoning (maybe had to much homebrew that night) but after using the IBU calculator I decided it would be too much hops to add the 2oz of hersbrucker hops, so I just added 1oz for the 60 minute boil. Now I only used .75oz of coriander with 12 minutes left, also instead of using the bitter orange peels I went to the store and bought some fresh oranges and used about 1 1/4 orange peels with 2 minutes left (I didn't use a muslin bag, I just threw 'em in there). So my question is was it the lack of hops or the fresh orange peels that made the beer too orange....y?

The orangy taste would be from the double whammy of under hopping and the fresh citrus.
I've brewed NBs Wit a number of times. The orange flavor is supposed to be subtle to balance with all ingredients. It is delicious as is. It is definitely not a clone of the Blue Moon wit.
I would recommend not tweaking a reputable recipe the first time brewing it. Try it as is then decide if it needs a small change to suit your palate.
 
Aright thanks, ya I still don't know what I was thinking with only using 1oz of hops
