Ok, so, yeah, there's a lot of threads on this sort of topic, but just have to ask anyway.
I'm a bit annoyed at my hefeweizen batches I've brewed (strong belgain batches always come out fine for me).... anyway, I digress.
First hefe: the bottles that were good, were good! But in the same batch, not all bottles carbonated well. Some were perfect. The ones that were less carbonated (even after a month) tasted rather sweet, maybe even cider-y.
So I brewed another batch. Simple kit. LME + water + hops, ferment (Wyeast strand that is Weihenstephan), and bottle.
Same story. 3 weeks later, some carbonation, but not nearly enough, and really damn sweet. No other off tastes though.
Thoughts? Recommendations? At this point, I'm ready to just let it sit a few months and see what happens.
