I plan on making an immersion chiller and when you use is there a need to cover the brew pot at all?

I don't see why you would want to cover the pot. That would just keep heat in, when you want it leave.

I was wondering since when you do an ice bath you are suppose to cover it. But maybe that is more to keep water from dripping in?

I believe the thought of covering it while chilling is because the risk of infecting the wort increases as the temperature is reduced. So by covering it, you are trying to prevent any nasties from falling into the brew.
